Taco Pasta Skillet


Tonight is one of those nights where I accidentally fell asleep at 4 and slept until 7:30 when I should have had dinner on the table an hour ago! A quick glace around my kitchen says only one thing can be for dinner tonight: Tacos! But.. another look around the kitchen and I have no taco shells... Well, what now? Now we make clean up easy and make dinner in one pan!



Much like most all of my dinner recipes, this one is under 500 calories and made in less than 20 minutes. Dinner is kind of a hectic time in this apartment, between my volunteering and recipe making, and Mr. H's schooling, there's not a lot of time in the day to put something in the oven to roast all day long. So I like to find simple filling dinners that feed a family, but are still minimal calorie intake all while getting it on the table quickly. This recipe is perfect to fit the bill! One bowl is super satisfying, and will leave you wanting more (if you can make room in your tummy ;). It's rich, creamy, tangy, and just all around wonderful! My entire skillet full of this disappeared in less than 10 minutes, if that helps your decision to make this or not :)
The first thing you'll want to do is start your noodles. Then brown your ground beef, drain it, and follow the directions on your seasoning packet.
Once your taco meat is done, cut up your cream cheese and drop it into your meat making sure to keep the heat on. Your cheese will never melt and mix in with the beef if you turn it down or off. Since egg noodles are so thin, they only take a couple minutes to cook entirely, so make sure you keep an eye on them. At this point they should be done, so go ahead and drain them.
Drop in your can of tomatoes and mix it with the ground beef/cheese. Then drop in your drained noodles and toss everything together. Then crush your chips and drop those in there too. You can mix those in, or just leave them on top for when you serve it. Any way you choose, I hope you enjoy this recipe and your family can enjoy it as much as mine does!

Ingredients:
1 lb Ground Beef
1 taco Seasoning Packet
1/2 Package Cream heese
4 cups Wide Egg Noodles - cooked and drained
1 serving (about 13 chips) Clancy's Ranch Tortilla Chips

1.) Brown the ground beef in a skillet. Drain, add taco seasoning as directed on package; cook until the water has reduced.
2.) Put cream cheese in skillet and toss with beef until cheese has melted and is completely incorporated with the beef
3.) Toss beef mixture with cooked noodles in pot and make sure everything is incorporated.
4.) Turn off heat, crunch up chips and put pieces into skillet. Mix if desired, or leave on top untouched. Serve while warm, enjoy!
