Strawberry Cookies and Creme Cookies

I know it’s 2 desserts in a row, and normally I try to space it out and give you guys something sweet then something savory. But my training got the better of me and I was REALLY feeling these cookies today! So here we are again, watching my diet while still trying to sneak a few cookies, and still getting you guys something delicious to try at home J

Much like my last cookie recipe (Funfetti Nutella Cookies), these delicious cookies take less than 20 minutes to make, bake, and devour!





These cookies have been a favorite of everyone that's tried them. The combination of strawberries and chocolate has been a long standing favorite in my household and almost every household I've come across; so it's no surprise that I get requests to make these cookies every time I visit someone! Depending on how long you cook them, these cookies range anywhere from chewy with an intense strawberry taste, to fluffy with a taste something similar to fruit loops. Any way you make these, they're a hit. You ready to get started? Let's do it!

The great thing about these cookies is that they take such a small amount of ingredients that they're a great recipe to make with the kids, and they're great in a pinch. Cookies are always a great treat to bring to a potluck or a family get together - especially when you don't have time for something big like a cake or a big batch of brownies. Grab a few of these household ingredients and get to it!

The first thing you need to do is roughly chop up the hershey's cookies n creme bar and set it aside. Then, grab a big bowl and mix together the cake mix and the baking powder. Whisk it together to make sure you distribute the baking powder evenly. Then, make a well in the middle of the bowl, this will hold your wet ingredients and help you mix everything together. 

Once you've made the well, crack in both eggs, the oil, and the vanilla. Start in the middle and whist together all of the wet ingredients and slowly work outwards and incorporate the mix little by little. Once you have about half of the mix incorporated, switch to a spatula and continue mixing the batter.
Switching to the spatula is essential to this batter. It tends to get very thick once you get more of the mix in there, and it gets tough to continue mixing with a tool that has so many holes and empty spaces in it. You could very well use the spatula from the beginning, but I find that it works better to start with a whisk to make sure you mix together the wet ingredients perfectly before you start incorporating the dry ingredients.

Once everything has been mixed well, add in your Hershey's chunks and fold those in. This batter isn't fragile so you don't have to worry about being gentle, although you shouldn't mix it so much as you should fold it. Just make sure that there's an even amount of chips in your batter.

Then the rest is easy! Use a tablespoon measurement to scoop out even balls of dough and place them evenly on 2 cookie trays, and pop them in the oven for about 8 minutes. Every oven is different, and Mr. H's oven seems to run a little bit hotter than mine so they cooked a bit differently than I would have liked. 8 minutes is usually the perfect amount of time to cook these as you just want to brown the bottoms of these, much like the funfetti cookies. If you cook them a little bit longer and the sides brown a little bit, it's okay but the texture will be a little bit lighter and they'll taste more like fruit loops than strawberries. But no worries, either way is delicious!
Take them out of the oven, and they'll look like this. Let them cool for at least 5 minutes before transferring to a wire rack (or your tummy!). I hope you guys liked these cookies as much as everyone in this house does!

Ingredients:
1 box Strawberry Cake Mix
3 Heaping Pinches Baking Powder
1/3 Cup Vegetable Oil
2 Eggs
1 Cup Chopped Hershey's Cookies and Creme Bar
1 Tbsp Vanilla

1.) Preheat the oven to 350 F, grease 2 cookie trays.
2.) Mix the cake mix and the baking powder in a bowl. Make a well in the middle to hold the liquid ingredients.
3.) Crack both eggs, oil, and vanilla into well in dry ingredients. Mix halfway with a whisk, then switch to a spatula and finish mixing.
4.) Add in Cookies and Creme chunks, fold in with spatula.
