Peanut Butter Cheesecake Pudding


Let's be completely honest - at the end of the day, how much time do you have to make dinner? Now how much time do you have left to make the kids happy with a low calorie dessert? Keep that in your head. Now, how long does it take to melt peanut butter? About a minute and a half. And that's all the time you need to make this delicious, rich, and indulgent dessert that will make even the biggest kids (Mr. H) happy! This pudding is great by itself with a sprinkling of chocolate chips, or you could put it into a pie crust and top it with whipped cream! I'll be trying the pie option next week ;)

With schedules as busy as they are these days, I couldn't even imagine adding kids to the mix! For all of you who work 8-10 hours a day and still have the energy to make dinner and dessert, I admire and applaud you. Most cooking class heroes have on average 1 hour to get dinner on the table and dessert in the fridge; and while I was in no rush tonight, I decided that there had to be a great recipe I could make in under 5 minutes that would make everyone's tummies happy and everyone's faces sport a smile. I looked around the pantry and saw some cheesecake pudding mix and I knew I just HAD to use it tonight!

I know you might be thinking "Boxed pudding mix?" And my answer is, "Yes. Boxed pudding mix". Because there's nothing wrong with taking a shortcut now and again :) Like I said, this dessert is ready in just about the time it takes to melt some peanut butter. So grab 2 bowls, a whisk, and a spoon and we're ready to go!

The first thing you'll want to do is pop your peanut butter in the microwave for 30 seconds. While it's in the microwave, make your pudding according to the package directions. When your microwave is done, stir the peanut butter, then pop it back in for another 30 seconds and go back to whisking your pudding.

After you've melted your peanut butter, it should look like crunchy soup. Now, pour all of that into your container with the pudding, and start mixing until it's all homogenized. It won't take very long, but make sure you reach all the way to the bottom to grab every last drop of cheesecake pudding to be mixed with the peanut butter!

Now that you've got your dessert done, it's time for presentation! I like to sprinkle a few chocolate chips on top of mine just to make it a little worse for my diet ;) Now just serve about half a cup of this and you'll be fully indulged!

Calorie Count: 225 per 1/2 cup serving

Ingredients:
1 box cheesecake instant pudding
2 cups fat free milk
1.5 cups Creamy or Crunchy peanut butter (I used Crunchy)


1.) Melt the peanut butter 30 seconds at a time until completely liquid.
2.) Make pudding as directed on package.
3.) Pour peanut butter into pudding, and whisk together
