Easy Chocolate Brownies

This week I'm sharing with you a recipe that I'd like you to put in your back pocket for a recipe I'll be sharing with you sometime later this month. Sometimes the urge just hits you for a thick, chocolatey, fudgey, gooey brownie. And let me tell you, it hit me hard a few days ago! Brownies are not something S and I usually keep in the house; we try to eat healthy and honestly if I make a pan of brownies Monday, between the two of us, the pan will be demolished by Wednesday morning. Especially with how easy this recipe is, it's a real challenge to not whip up a batch every time a little craving hits! It's not something I'm proud of, but if you leave me around chocolate for too long, you better not have had any sentimental attachment to it! So this week I'm squashing a craving and sending the rest out into the world to co-workers and friends in the hopes that they'll gain the pounds meant for me ;)

On top of making brownies because I love brownies, I made them because I had an idea for a cookie recipe that required brownie bits. I'll be giving you the single batch recipe this week that makes an 8x8 pan; doubling the recipe will give you enough for a 9x13, and if for some reason you were in need, quadruple the recipe for an 11x13. As a testament to how good these brownies are, a few months ago I made a quadruple recipe for an apartment full of boys, and they were gone within the day!  These things are amazing, and you can have them in just 30 minutes!

Let's get started!

Whisk together your oil, sugar, and eggs.

Then add in your flour, cocoa powder, salt, and baking soda.

Almost there! At this point, I usually add chocolate chips and Heath Bit's 'o' Brickle, but since the brownies were also for another recipe, I kept them plain.

The batter will be very thick, but there's no need to smooth it into the pan or anything. Just pour it into a greased pan, and let it sit for a few seconds to even itself out. And then into the oven at 350 for 25 minutes!

And now you can enjoy chewy brownies in just 30 minutes! (Longer if you make a larger batch, but not by much.) I hope you guys like these brownies and make them soon! Stay tuned next week for another yummy bite!

Ingredients:

1/2 cup vegetable oil
1 cup white sugar
1 t vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/4 t baking powder
1/4 t salt
1/2 bag chocolate chips
1/4 bag Heath Bit's 'o' Brickle

1.) Heat oven to 350 F
2.) In a bowl, mix together oil, sugar and vanilla; then add in eggs
3.) Add in flour, cocoa powder, baking powder, and salt. Fold in chocolate chips and toffee bits
4.) Pour batter into greased 8x8 pan. Bake for 20-25 minutes or until knife inserted in middle comes out clean. Enjoy!

  1. These brownies were DELISHHHH. The recipe was super easy to follow (this is coming from someone with almost zero experience in the kitchen.) I also enjoy the picture tutorial, it helped me out a lot by reassuring me what my brownie mix is supposed to look like after each step. I originally planned on making these brownies for the Double Chocolate Fudge Chocolate Chip Cookies...but I ended up eating half of the brownies before I finished making the cookie dough mix. I love this recipe, the brownies come out moist and sweet without the sweetness being over powering like most other brownies do. Definite 5 Stars from me. Post more chocolatey stuff(:
